Instructions

  1. Place the raspberries in a fine-mesh sieve and press them with the back of a spoon to extract the juice. Discard the seeds and set aside the raspberry puree.
  2. In a heatproof bowl, add the chopped dark chocolate.
  3. In a small saucepan, heat the heavy cream and butter over medium heat until it begins to simmer. Remove from heat and pour over the chopped chocolate. Let it sit for a minute to melt the chocolate.
  4. Add the raspberry puree and vanilla extract to the chocolate mixture. Stir until smooth and well combined.
  5. Cover the bowl and refrigerate the mixture for at least 2 hours or until firm.
  6. Using a small spoon or a melon baller, scoop out portions of the chilled mixture and roll them into small truffle-sized balls.
  7. Roll the truffles in cocoa powder to coat evenly.
  8. Place the truffles in an airtight container and refrigerate for another 30 minutes to set.
  9. Serve the Chocolate Covered Raspberry Truffles chilled and enjoy!

Notes

  • For added texture, you can roll the truffles in crushed nuts or shredded coconut instead of cocoa powder.
