Mushroom and Spinach Omelette with Whole Grain Toast

Ingredients

  • 3 large eggs
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach leaves
  • 1/4 cup diced onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 slices of whole grain bread

Instructions

  1. In a bowl, whisk the eggs until well beaten. Season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Add the diced onion and sliced mushrooms to the skillet. Sauté until the mushrooms are tender and the onions are translucent.
  4. Add the fresh spinach leaves to the skillet and cook until wilted.
  5. Remove the vegetables from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat.
  7. Pour the beaten eggs into the skillet and cook until the edges start to set.
  8. Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked eggs to flow to the edges.
  9. Once the omelette is mostly set, spoon the sautéed vegetables onto one half of the omelette.
  10. Fold the other half of the omelette over the vegetables and cook for another minute to melt the cheese.
  11. Remove the omelette from the skillet and serve with whole grain toast on the side.
