Instructions

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  2. In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to make the marinade.
  3. Place the chicken chunks in a separate bowl and pour half of the marinade over them. Toss to coat the chicken evenly. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating the ingredients.
  6. Brush the skewers with the remaining marinade.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  8. Remove from the grill and let them rest for a few minutes before serving.
  9. Serve the Grilled Chicken and Vegetable Skewers hot with your favorite side dishes.

Service Suggestion

  1. Pair the Grilled Chicken and Vegetable Skewers with a refreshing cucumber and tomato salad.
  2. Serve with a side of herbed rice and a dollop of Greek yogurt for a Mediterranean-inspired meal.

Notes

  • Serve the skewers with a side of tzatziki sauce or a squeeze of fresh lemon juice.
  • For a complete meal, serve the skewers over a bed of cooked quinoa or with a side of grilled pita bread.
