Sesame Ginger Tofu with Stir-Fried Vegetables

Ingredients

  • 14 oz (400g) firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons sesame seeds
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small broccoli, cut into florets
  • 1 medium carrot, sliced
  • 4 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, minced garlic, and sesame seeds.
  2. Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for at least 15 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated tofu to the skillet, reserving the marinade. Cook for 5-7 minutes, or until the tofu is golden and crispy.
