Sesame Ginger Tofu with Stir-Fried Vegetables

Ingredients

  • 14 oz (400g) firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic.
  2. Add the cubed tofu to the marinade and let it sit for at least 15 minutes.
  3. In a small bowl, mix the cornstarch and water to create a slurry.
  4. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  5. Add the marinated tofu to the skillet and cook until golden brown on all sides.
  6. Remove the tofu from the skillet and set it aside.
  7. In the same skillet, stir-fry the bell peppers, carrot, and broccoli for a few minutes until crisp-tender.
