Instructions

  2. Place the chicken chunks in a ziplock bag or shallow dish, and pour half of the marinade over the chicken. Toss to coat evenly, then refrigerate for at least 30 minutes (or up to 4 hours) to marinate.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken, bell peppers, red onion, and zucchini onto the soaked wooden skewers, alternating the ingredients.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred and tender.
  6. Remove the skewers from the grill and brush them with the remaining marinade.
  7. Serve the Mediterranean Chicken and Vegetable Skewers hot with a side of couscous or a fresh salad.

Service Suggestion

  1. Garnish with fresh lemon wedges and chopped parsley for a burst of freshness.
  2. Pair with a glass of chilled Sauvignon Blanc for a perfect wine pairing.

  • For a complete Mediterranean meal, serve with warm pita bread and a Greek salad.
