Ingredients

  • 2 boneless, skinless chicken breasts, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried basil, salt, and pepper to make the marinade.
  2. Place the chicken chunks in a ziplock bag or shallow dish, and pour half of the marinade over the chicken. Toss to coat evenly, then refrigerate for at least 30 minutes (or up to 4 hours) to marinate.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken, bell peppers, red onion, and zucchini onto the soaked wooden skewers, alternating the ingredients.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred and tender.
  6. Remove the skewers from the grill and brush them with the remaining marinade.
