Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan and set aside.
  2. In a large bowl, combine the flour, rolled oats, granulated sugar, baking powder, and salt.
  3. Add the cold cubed butter and vanilla extract to the bowl. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Press two-thirds of the mixture into the bottom of the prepared baking pan to form the crust.
  5. In a separate bowl, combine the blueberries, lemon juice, cornstarch, granulated sugar, and ground cinnamon. Gently toss until the blueberries are coated.
  6. Spread the blueberry mixture evenly over the crust in the baking pan.
  7. Sprinkle the remaining oatmeal mixture over the blueberry layer as the crumble topping.
  8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  9. Allow the bars to cool completely before cutting into squares. Serve and enjoy!
