Teriyaki Chicken Lettuce Wraps

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into small pieces
  • 1/4 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil
  • 1 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced water chestnuts
  • 8 large lettuce leaves
  • Optional toppings: sliced green onions, sesame seeds

Instructions

  1. In a bowl, whisk together the teriyaki sauce, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
  2. Place the chicken pieces in a shallow dish and pour half of the teriyaki sauce mixture over them. Reserve the remaining sauce for later.
  3. Let the chicken marinate for at least 20 minutes.
  4. Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes.
  5. Add the shredded carrots, diced red bell pepper, and water chestnuts to the skillet. Cook for an additional 2-3 minutes, until the vegetables are slightly tender.
