Ingredients
- 1 lb (450g) boneless, skinless chicken breasts, cut into small pieces
- 1/4 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
- 1 cup shredded carrots
- 1/2 cup diced red bell pepper
- 1/2 cup diced water chestnuts
- 8 large lettuce leaves
- Optional toppings: sliced green onions, sesame seeds

Instructions
- In a bowl, whisk together the teriyaki sauce, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
- Place the chicken pieces in a shallow dish and pour half of the teriyaki sauce mixture over them. Reserve the remaining sauce for later.
- Let the chicken marinate for at least 20 minutes.
