Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup snap peas
  • 1 carrot, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine the soy sauce and cornstarch. Add the tofu cubes and toss gently to coat. Set aside.

  6. Return the tofu to the skillet and stir-fry for an additional 1-2 minutes to heat through.
