Vegetable and Tofu Stir-Fry with Ginger Soy Sauce

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup snap peas
  • 1 carrot, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine the soy sauce and cornstarch. Add the tofu cubes and toss gently to coat. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the grated ginger and minced garlic, and sauté for 1-2 minutes until fragrant.
  3. Add the marinated tofu to the skillet and cook until lightly browned on all sides. Remove the tofu from the skillet and set aside.
  4. In the same skillet, add the sliced bell pepper, broccoli florets, mushrooms, snap peas, and carrot. Stir-fry for 4-5 minutes until the vegetables are crisp-tender.
  5. In a small bowl, whisk together the sesame oil, rice vinegar, honey, salt, and pepper. Pour the sauce over the stir-fried vegetables and toss to coat.
  6. Return the tofu to the skillet and stir-fry for an additional 1-2 minutes to heat through.
  7. Serve the Vegetable and Tofu Stir-Fry over cooked rice. Garnish with sliced green onions.
