Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 8 oz (225g) snow peas, ends trimmed
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken or vegetable broth
  • 2 tablespoons sesame oil
  • Cooked brown rice, for serving
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, and broth. Set aside.

  4. Add the shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the snow peas and sliced red bell pepper. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
  6. Return the cooked shrimp to the skillet and pour in the sauce mixture. Stir-fry for an additional 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
  7. Serve the shrimp and snow pea stir-fry over cooked brown rice.
