Ingredients

  • 2 large flour tortillas
  • 1 cup fresh spinach leaves
  • 1 cup sliced mushrooms
  • 1/2 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. In a skillet, melt the butter over medium heat.

  11. Repeat the process with the remaining tortilla and ingredients.
