Cauliflower Fried Rice with Shrimp and Vegetables

Ingredients

  • 1 medium head of cauliflower
  • 1 pound (450g) shrimp, peeled and deveined
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice-like grains.
  2. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat.
  3. Add the minced garlic and diced onion, and sauté until fragrant and golden.
  4. Add the shrimp and cook until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add another tablespoon of sesame oil and stir-fry the mixed vegetables until they are tender-crisp.
  6. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  7. Add the riced cauliflower to the skillet and stir-fry for about 5 minutes, until it becomes tender.
  8. Return the cooked shrimp to the skillet and stir in the soy sauce and fish sauce (if using). Season with salt and pepper to taste.
  9. Continue to cook for another 2-3 minutes, allowing the flavors to meld together.
  10. Garnish with chopped green onions and serve hot as a delicious and healthy alternative to traditional fried rice.
