Cauliflower Fried Rice with Tofu and Vegetables

Ingredients

  • 1 medium head cauliflower, riced
  • 8 oz (225g) firm tofu, drained and cubed
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium heat.

  4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are tender-crisp.
  5. Push the tofu and vegetables to one side of the skillet and add the riced cauliflower to the other side.
  6. Drizzle the sesame oil and soy sauce over the cauliflower, and stir-fry for 3-4 minutes until the cauliflower is cooked but still slightly crisp.
  7. Combine the cauliflower with the tofu and vegetables, and toss everything together until well mixed.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions and serve hot.
