Stuffed Bell Peppers with Ground Turkey and Quinoa

Ingredients

  • 4 large bell peppers, any color
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
  4. Add the diced onion and minced garlic to the skillet with the turkey and cook until the onion is translucent.
  5. Stir in the cooked quinoa, diced tomatoes, dried oregano, dried basil, paprika, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld.
  6. Stuff the bell peppers with the turkey and quinoa mixture, packing it tightly.
  7. Place the stuffed bell peppers in a baking dish and cover with foil.
  8. Bake in the preheated oven for 25 minutes.
  9. Remove the foil, sprinkle the shredded mozzarella cheese over the tops of the peppers, and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
