Lentil and Vegetable Curry

Ingredients

  • 1 cup dried lentils, rinsed and drained
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using), and cook for another minute to toast the spices.
  4. Add the diced carrots, bell pepper, and zucchini to the pot, and cook for 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and diced tomatoes (with their juices), and stir to combine.
  6. Add the rinsed lentils to the pot, and season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the lentils and vegetables are tender.
  8. Serve the Lentil and Vegetable Curry hot, garnished with fresh cilantro. Enjoy with steamed rice or naan bread.
