Stuffed Bell Peppers with Quinoa and Black Beans

Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine cooked quinoa, black beans, corn kernels, diced tomatoes, red onion, minced garlic, ground cumin, chili powder, paprika, salt, and pepper.
  4. Stuff each bell pepper with the quinoa and black bean mixture.
  5. Place the stuffed bell peppers in a baking dish and cover with foil.
  6. Bake in the preheated oven for 25 minutes.
  7. Remove the foil, sprinkle shredded cheddar cheese over the tops of the peppers, and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro and serve hot.
