  • 4 bell peppers, any color
  • 1 cup cooked quinoa
  • 1 cup mixed roasted vegetables (such as zucchini, eggplant, and red onion)

  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
