Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 tablespoon Thai red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 cup snow peas
  • Fresh cilantro, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium heat.

  4. Push the vegetables to one side of the skillet and add the Thai red curry paste. Cook for a minute to release its flavors.
  5. Pour in the coconut milk, vegetable broth, soy sauce, brown sugar, and lime juice. Stir well to combine.
  6. Bring the mixture to a simmer and let it cook for about 10 minutes, until the vegetables are tender.
  7. Add the snow peas and cook for an additional 2 minutes, until they are crisp-tender.
  8. Remove from heat and garnish with fresh cilantro.
