Ingredients

  • 4 egg whites
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1 tomato, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped fresh herbs

Instructions
