  • 2 large sweet potatoes, peeled and diced

  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large eggs
  • 2 cups fresh spinach leaves
  • 4 large whole wheat tortillas

Instructions
