Greek Stuffed Chicken Breast with Tzatziki Sauce

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach leaves, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the chopped spinach, crumbled feta cheese, sun-dried tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper.
  3. Using a sharp knife, make a slit in the side of each chicken breast to create a pocket.
  4. Stuff each chicken breast with the spinach and feta mixture, pressing it in gently.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through and no longer pink in the center.
  7. While the chicken is baking, prepare the Tzatziki Sauce by combining the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl. Mix well.
